NZ Brill Fillets - A member of the right eye flounder family and one of my favourites. This is superficially similar to European Brill. The meat ranges from apricot to off white coloured and whitens on cooking. It has a delicate texture and flavour and can be fried, steamed, poached or baked in the same manner as sole or flounder. It's not fishy and is heaven on your plate.
Storage : Keep frozen at -18°C or below.
