Zeus faber is also called John Dory, St Pierre or Peter’s Fish. Its body is oval, high and tight, with a bronze color and silver reflections. It is marked with a dark circular spot on each side. Legend tells that this spot is the thumbprint of Saint Peter, who made his mark before throwing it back into the sea.
John Dory’s dorsal fin is made of elongated thorns. It lives in the open sea on the sandy seabed. Quite rare, it is especially appreciated for its delicate and delicious white and firm flesh. Its flavors are close to those of the Lobster or the Crab.
