Ribeye cap is a piece of meat has less connective tissue, but the oil, taste, and tenderness have reached an excellent balance. It is as tender as beef tenderloin, and it has more oil and beef aroma. Cattle can take out up to 18oz of meat, can serve about 4 people, the amount is small and rare in the market.
